Antioxidant Fruit salad with Lime & Passionfruit

Weight Loss Recipe

INGREDIENTS

6 lychees, peeled

200g seedless watermelon flesh, peeled and chopped

1 mango, peeled, stoned and chopped,                                                                                     ½ red pawpaw or choice of stonefruit peeled, stoned and chopped                                                                                                 ½  cup fresh or frozen (no added sugar) berries                                                                                                1 kiwi fruit sliced

2 passionfruit, halved and pulped, to serve                                                                                                                                                                ¼ cup Sunflower seeds to serve

Lime wedges, to serve

LIME-PASSIONFRUIT DRESSING

1 tablespoon fresh lime juice

6 passionfruit, halved and pulped

optional- torn fresh mint leaves

METHOD

1)    Chop all fruit and place in bowl, stir through mint leaves if adding.

2)    Squeeze over fresh Lime and passionfruit

3)    Sprinkle over sunflower seeds
